We have made 2 different things at our house lately. Both of which were quite good. The reason I'm calling it the good and the bad, is because one of the recipes is something that is quite good for you. The other tastes so delicious, but is basically terrible for you. The recipes are for Bruschetta Chicken, which was recommended to us by some friends. The other recipe is for Toffee Fruit Dip and it is so very good! I made it for a potluck Ryan had at school last week and served it with strawberries. I then used what we had leftover to frost some brownies last night and it was so delicious! BTW, I'm no longer on my chocolate strike. I really haven't been since my birthday. We made a chocolate marble cake, with chocolate frosting. Once we had eaten about half of it (by we, I mean me!) I thought that if I cut the cake and put it in the freezer that would stop me from eating it. Do you think that actually worked? Well, the answer is no! I ate every last piece of it frozen. Not all in one day, mind you. Still, quite shameful!
Bruschetta Chicken
1/4 cup Sun-Dried Tomato Dressing, divided (I couldn't find this dressing, we used Italian dressing and it was very good!)
4 boneless skinless chicken breast halves
1 medium tomato, finely chopped
1/2 cup mozzarella cheese
1/4 cup chopped fresh basil or 1 tsp. dried basil leaves
Place large sheet of heavy-duty foil over half of grill grate; preheat grill to med. heat. Pour 2 Tbsp. of dressing over the chicken in resealable plastic bag and seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 mins. to marinate. Remove chicken from marinade. Grill chicken on uncovered side of grill for 6 mins. Meanwhile, combine tomatoes, cheese, basil and remaining marinade. Turn chicken over; place cooked-side up, on foil on grill. Top evenly with tomato mixture. Close lid. Grill an additional 8 mins. or until chicken is cooked through.
Toffee Fruit Dip
Cream together:
8 oz. cream cheese
1/2 cup powdered sugar
3/4 cup packed brown sugar
1 tsp. vanilla
Then add 3/4 cups toffee bits to mixture. Serve with your favorite fruit.
Both easy, fast and delicious recipes. I think you will like them too! Also, I should mention that I didn't make the chicken. Ryan did and it was delicious!

Also, we had that toffee dip with fruit at new beginnings this year and it was so good. Putting it on a cake sounds amazing. I bet it would be good on cinnamon rolls instead of cream cheese frosting, or like on an apple cake. Oh wow. I'm totally salivating now.
Oh I laughed so hard at you eating frozen cake. I love when I try those types of strategies and then just end up eating things some wierd way. Very funny.
I am totally going to try the brushetta chicken, I just happen to have all the ingredients in my fridge. Score! And just for the record, I am totally jealous that you have a husband that cooks! I love to cook, but it is sure nice to eat a home cooked meal that you didn't have to make yourself. But, I am working with him.
I don't even like chicken and that recipe still sounds good.

You guys just have a grill or do you use a grill pan in the house? I want that yummy chicken! We aren't allowed to have grills at the condo complex though.
It's OK to use the royal WE when you are talking about yourself eating 1/2 a cake. Frozen would not only not stop me, but would likely encourage me. One of my favorite things is cake that's been in the fridge...
Trader Joe's has the BEST bruschetta. It's awesome. I put it on chicken, or on Trader Joe's pizza dough and make Margarita Pizza.
I love the toffee dip too. Once I just ate it with a spoon, why ruin it with something healthy?
