Monday: Pasta with homemade marinara, green beans and garlic bread
Tuesday: Meatloaf (very few ingredients, easy and good!) with broccoli and baked potatoes
Wednesday:Pepper chicken with rice
Thursday: Hamburger Stroganoff
Friday:Homemade pizza
Saturday:Leftovers or eat out
Sunday:Chicken enchiladas (this recipe is seriously one of the easiest, quickest and most delicious chicken enchilada recipes that I've tried) and Mexican rice

You know how I love recipes that include the nutritional information, ie the meatloaf. Way to be a good menu planner! I think we're having egg salad sandwiches for dinner tonight--I'll think of you.
My chicken enchilada recipe is quite similar. Instead of the picante sauce (I don't like it in the enchiladas) I add a can of diced green chilis (they're not spicy) and I sometimes use canned green chili sauce.
We love chicken enchiladas. Thanks for sharing your menu. I'm not organized enough to do that.
