True the week is almost over, but I thought I'd share what we're having for dinner this week anyway. Mostly because if I don't do this I tend to forget what I was going to make or where I found the link for the recipe. This helps keep me in check. So without further ado here's this weeks menu:
Monday:Homemade pizza
Tuesday:Baked chimichangas (basically crispy burritos) Thanks for this recipe Lara, we liked it!
Wednesday:Spaghetti with homemade meat sauce, green beans and garlic buns
Thursday:Ate out
Friday:Taco soup (I'm cutting this in half, because it makes TONS!)
Saturday: Layered chicken and black bean enchiladas
Sunday:Chicken Spaghetti (minus the pimentos, they make me feel weird!)

How do you make so many meals a week? Seriously. Every week when you post this it makes me feel like the worst wife ever because I just don't have the energy! My goal is to be more like you :)
Well, you also have 2 kids and are pregnant! I don't always make all the things I post. Sometimes we end up eating leftovers, eating out, etc. and then I just push the stuff to the next weeks menu. Also, all the stuff I make is really, really easy. I'm not all about things being gourmet or anything that requires a lot of effort. I use the crockpot often and that really helps to save on time!
I made the chimmichangas...ok I think I poched the spelling...but they were great!
